Baked Oatmeal Cakes

My friend Hannah recently sent me this recipe for baked oatmeal.  I made it a few days ago, and oh man.  It’s good.  (And oatmeal is much, much more economical than any boxed cereal you can buy, and even more so if you can buy oats from the bulk bins of a natural grocery store.)

When it came out of the oven, the texture was basically like regular oatmeal (see first photo), but after it sat in the fridge for a few hours it became harder and chewier, almost like bread pudding or something.  It was so great.  I cut some circles out of it and cooked them up in a pan (just heated them in some oil over medium heat for a minute or two on each side).

*This also tastes really good cold, with some yogurt or whole milk and some fresh berries on top.

(Notes about the recipe: I used 2 c. water plus 4 T raw apple cider vinegar instead of a cultured milk product like yogurt or kefir for the overnight soaking), and instead of the cinnamon I mixed in 2 t. vanilla.)

  1. You MUST try this with fruit and nuts!!! Think of the difference between plain pancakes and blueberry pancakes or banana nut pancakes. Also, mine didn’t turn out the same consistency. It was more like bread pudding to begin with. I cut and served it with a spatula. I like the idea of little fried cakes though. Will try that next time!

    Good point about oatmeal being a cheap “cereal.” Obviously better for you, too. Even the cereals that aren’t packed with sugar are mostly suspect. Did you know that puffed anything (rice, oats, fruit, veggies) is toxic? Something to do with the processing. Or so they say….

    1. What?! I did not know that about puffed cereal! Crazy. I didn’t measure the ingredients as much as I should have, probably… But yeah, I loved the consistency. Total (healthy) comfort food, period.

      1. Like you said before, everything is dangerous according to someone! I’ve been frustrated recently over how sun is so bad for your skin but so is sunscreen and then again, you really need some sun anyway so you’d better go outside and really it ought to be midday for the most vitamin D but you’d better not get burned and OMG WHAT’S A GIRL TO DO??? 😉

  2. Ha ha! I know, it’s crazy. I’ve been reading a bunch of that sunscreen stuff this week… Yikes. But I’m somewhat cheered by the thought that we’re all going to die sooner or later, whether it’s cancer from the sun or cancer from sunscreen…. (Though I think once I have a baby to worry about like you do I’ll probably have to care a little more……..)
