Oh, fall is upon us. Yellow leaves have been showering down around our house this morning. There was an apple festival downtown this weekend, and this week is Cider Week in the Finger Lakes. This morning I made some almond meal pancakes and decided to top them with some apples cooked up in a lot of butter and a pinch of cinnamon and nutmeg.
It’s not much of a recipe, but you can see how to make the pancakes here, and for the apples, just throw 2 T butter in a skillet and let melt on medium heat. Thinly slice a tart apple and toss it in along with a pinch of cinnamon and a pinch of nutmeg. It’s worth buying some little, whole nutmegs and just grating them on the finest part of a cheese grater, by the way… Cook the apples in the butter and spices for 2-3 minutes, until they are soft but not mushy. Serve atop pancakes with more butter and a tiny drizzle of maple syrup.
(The apples are also delicious on their own, of course.)
