Salad with Beet Greens, Pluots & Gorgonzola


Sorry for the repetition, y’all, but I fixed the same salad for dinner, only this time with beet greens and plots instead of the swiss chard and apricots. So actually not the same salad at all.  The colors were just too pretty to pass up, so I took a few pictures.  If you want to make it: 1 c. shredded or very finely chopped beet greens (or other greens), 1 pluot (or plum or apricot or nectarine) diced into bite-sized pieces, crumbled gorgonzola cheese.  Drizzle with olive oil and top with lots of fresh black pepper.  This (or variations of it) is going to be my staple salad for the rest of the summer.



Also.  This baby has been sleeping a solid 8 hour stretch every night for the past 3 or 4 weeks.  Amazing.  Thank you, pacifier & Jesus.
